I tried to make cornbread a while back, but my wife complained about it having too strong of a corn taste. So I added a bit of gluten free flour to it. Its still pretty close to an authentic southern cornbread, but you are free to add a little honey to it if you want it a little sweeter.

makes 18 mini muffin loaves
2 C. Corn Meal
2/3 C. Gluten Free Flour Mix
1/2 tsp Baking Soda
2 tsp Baking Powder
1 tsp salt
1 1/2 C. butter milk
1/4 C. Veg oil or bacon drippings
2 large eggs
(optional) 2-4 Tbsp honey
1. Combine all dry ingredients in a bowl and mix well.
2. Add wet ingredients
3. pour into greased muffin pan an bake at 400degrees for 15 to 20 minutes
