Chicken Nuggets

These I actually made as a prep for orange chicken, but they really stand out well by themselves.

2 lb. boneless chicken
1 large egg
1 ½ tsp. salt
¼ tsp. pepper
1 Tbs. oil
¼ c. Wendy Wark Flour Mix
½ c. cornstarch
oil (for deep frying)

1. Cut chicken into 1 or 2 inch chunks.
2. In large bowl mix chicken, egg, salt, pepper and oil(1 Tbsp).
3. In bowl mix flour and cornstarch together.
4. Coat chicken with flour mixture.

5. Heat oil for frying to 375° F.
6. Fry chicken in small batches for 3 to 4 minutes, or till golden brown.
7. Remove nuggets with slotted spoon, and drain on paper towel.
