Fresh Pasta

1 C. Rice Flour
1/2 C. Brown Rice Flour
1/2 C. Tapioca Starch
1/2 tsp salt(possibly a little more, still tweaking)
1 1/2 tsp Xanthan Gum
3 eggs (but I think I’m gonna change it to 4 because I used about an eggs worth of water extra)
plus a little water or flour to make sure its not too dry or sticky

1. mix all dry ingredient
2. mix in eggs
3. knead for 10 minutes
4. roll out flat, and cut into noodles(I used a pasta machine and it worked out great)
5. bring water to a boil, and add noodles. boil for about 12 minutes.

Vegetable Pasta Salad

I think Mrs Leeper’s pasta has changed significantly. The last two times I’ve tried making this I’ve ended up with a nasty slime:( So either make sure you rinse the hell out of the pasta, or like me, look for a different brand.

1 – 12oz Mrs Leeper’s Rice Vegetabe Twists(or other gluten free vegetable pasta)
1/3 C olive oil
2 TBSP Rice vinegar
1 TBSP sugar
1/2 tsp salt
1/4 tsp pepper
1/2 tsp mustard
1/4 tsp garlic powder
1 TBSP gluten free soy sauce
2 Roma tomatoes – diced
1 C Jack Cheese – cubed
1 Can black olives
1 lb. chicken – cooked, and cubed into bite size pieces

1. cook pasta according to directions on package.
2. In bowl mix soy sauce, garlic powder, mustard, salt, pepper, vinegar, and oil.
3. combine all ingredients in large pot or bowl. Serve.

Beef Stroganoff

I made this for the first time a couple weeks ago, but I didn’t really get any accurate measurements, just kinda guessed on a few items. But I made it again tonight, and worked out the amounts. hope everyone enjoys it.

2 cups uncooked gluten free pasta
1 lb. ground beef
2 c. chopped mushrooms
1 tsp. worcestershire sauce
¼ c. Wendy Wark Flour Mix
⅔ c. sour cream
½ tsp. salt
1 ½ c. beef broth
¼ c. butter or margarine
1 clove garlic
1 medium onion

1. cook noodles according to package directions
2. saute garlic, mushrooms, and onion with the butter and set aside
3. brown ground beef and drain excess greese
4. stir in 1 cup broth, worcestershire sauce and salt.
5. heat to boiling then reduce heat to medium and simmer for 15 minutes
6. in a cup, stir together remaining 1/2 cup broth and flour
7. turn heat back up to med-high and stir flour mixture into beef.
8. boil for one minute, stirring constantly
9. stir in vegetables and reduce heat
10. stir in sour cream(don’t boil). mix until hot throughout.
11. serve over noodles.
